Perhaps the most delicious African dessert she has up her sleeve is her non-bake Amarula cheesecake. It is also the easiest thing to prepare, even without electricity. Amarula is a South African cream liqueur with a fruity kick. Here is the recipe for Maggie’s delicious non-bake Amarula cheesecake:
Use any digestive biscuits you like, crushed, and add 100 grams of melted butter to the crumbs making it a texture of damp sand. Press into a baking tray and freeze. Mix a generous cup (150ml) of Amarula with 200 ml of whipping cream. Beat sugar (100g) and soft cream cheese (500g) and combine with the Amarula cream. Pour it all on the frozen crust and smooth it out. Refrigerate preferably overnight. (Optional: use 4tsp of gelatine powder to bind it better). Top it up with any berries available or chocolate swirls. And then indulge and enjoy!
